Medellin

Medellin sits in a mountain valley in northern Colombia, a city that rebuilt its reputation over the past two decades from the epicenter of the drug wars into one of Latin America's biggest tech and remote-work hubs. Its Metrocable gondolas connect hillside neighborhoods once considered no-go zones to the city center, a symbol of the transformation locals call themselves "paisas" and take real pride in. The climate, dubbed eternal spring, keeps temperatures mild year-round.

Bandeja paisa, a heaped plate of beans, rice, ground beef, chorizo, fried egg, plantain, and avocado, is the definitive regional dish and not meant to be finished in one sitting. Arepas here are thicker and plainer than the Venezuelan version, usually served as a side rather than stuffed. Locals are warm but direct about safety, ask which neighborhoods to avoid at night rather than assuming the whole city is fine.
